    Rainbow Stuffed Turkey Bell Peppers


    There are many different ways that you can prepare stuffed peppers, some with meat and bread stuffing, some with meat and rice, others like the vegan stuffed peppers. You don’t need to use just green peppers to stuff them, you can use different colors. I happen to like using Paleo ingredients with my stuffed peppers using different colored peppers. Using lots of veggies in your stuffed peppers with different colored peppers makes it lower in carbs, fat and healthier for you. Peppers are a great way to create a meal out of them because you can do so much with them besides making a salad out of them.

    Colored stuffed peppers are easier to prepare and they bake for 40 minutes in the oven at 425 degrees. You can use ground beef or turkey or just veggies to stuff them. I prepared ground turkey, an egg, grated carrots, mushrooms, fresh garlic cloves, onions, fresh chives or whatever herbs you prefer, add salt and pepper to give it flavor. You can add shredded cheese on top of the stuffed peppers, or you can have it without shredded cheese, whichever you prefer.

    Make sure you have some kind of cake pan to place them in because bell peppers will bleed out when baked. Make sure the bell peppers are brown on top if you use meat to cook them in so they’re nice and tasty with that meat flavor, with the veggies in them. For a side dish, they’re good with frozen veggies. They’re good as leftovers too. If you don’t like to cut off the top of the bell pepper, you can also cut them in half and stuff them too! Whatever method you use to prepare these delicious kind of meals, they’re delicious no matter how you prepare them.


    1 pound ground turkey
    1 large egg
    1 cup carrots, shredded
    ¼ cup onions, sliced into pieces
    2 garlic cloves, cut into pieces
    8 ounce pkg mushrooms, sliced into small pieces
    0.75 pkg fresh chives, cut into pieces
    ½ tsp salt
    ¼ tsp pepper
    1 Tbs dried parsley flakes
    1 red bell pepper
    1 green bell pepper
    1 yellow bell pepper
    1 orange bell pepper


    Preheat oven 425 degrees. In large bowl, put in ground turkey, egg, carrots, onions, garlic, mushrooms, chives, salt, pepper and parsley flakes. Mix well with your hands until veggies and turkey mixed well. Cut the top of the bell peppers and stuff them with turkey stuffing. Bake for 40 minutes or until meat is brown. Bake at 425 degrees. Serves 4
