    Last week, as I went shopping for groceries, I saw some wonderful looking apple muffins. Unfortunately, I couldn’t buy them because they were loaded with sugar and wheat, so I decided to make my own apple cider muffins. I have learned to alter ingredients from regular ingredients to sugar-free using “Truvia” instead of sugar and gluten-free flour instead of regular flour. As the holidays approach faster, I will be doing my usual low fat baking using special ingredients. I love to bake and be creative with it.

    Ingredients

    1 ¾ cup of Millet flour
    ¾ cup of Truvia
    2 tsp baking powder
    ¼ tsp salt
    1 large egg, beaten
    ¾ cup apple cider
    ¼ cup grape seed oil
    ½ cup chopped walnuts
    1 small apple, peeled, sliced thin, and diced into small pieces

    In small bowl, peel, slice and cut apple into small pieces, chop walnuts, in another bowl, add flour, Truvia, baking powder, salt and mix well. Last of all, in another bowl, beat egg, add apple cider, oil and add to the dry, apple, walnut ingredients. Last of all, grease muffin pan and add the ingredients to muffin pan then bake for 25 minutes or until done at 425 degrees.

    Paleo Apple Crisp Recipe

    Now, since summer is over and fall is here, I decided to make my favorite fall dessert, apple crisp. I wanted to make a “different kind of apple crisp” that is different from other kinds of “apple crisps ” which are high in carbohydrates and high in sugar. Since it’s my first time making this apple crisp the topping turned out tasting good, but the apple filling tasted rather sour because of the lemon juice that I added, so I added Truvia, as a natural sweetener. It ended up tasting pretty good, but the apple filling could use some improvement.

    This apple crisp isn’t likely to elevate your blood sugar and it’s healthier for you. I used dairy-free and gluten-free ingredients. I added shredded, unsweetened coconut flakes, millet flour that is gluten free, coconut oil, honey, lemon zest, orange zest, lemon and orange juice with real lemons, and cinnamon. You can make apple crisp, lots of different ways. Whatever you do, make sure if you pour lemon juice from real lemons on the apples, add plenty of honey to it, about a ½ cup of honey or more to the taste of your liking.

    Ingredients

    5 medium Granny Smith apples, cored and sliced
    2 cups of unsweetened coconut
    1 cup millet flour, sifted
    1/3 cup of raw honey
    ½ cup of coconut oil melted in microwave
    1 tbsp cinnamon
    Pinch of sea salt

    Instructions

    Preheat oven to 350 degrees
    Measure ½ cup of coconut oil and melt in microwave for 30 seconds
    Combine coconut flakes, honey, millet flour, coconut oil and spices in a large bowl. Mix well.
    Place apples in a greased baking dish and spread the crumb mix on top.
    Bake for 40-45 minutes or until topping is golden brown.
    Top the warm apple crisp with coconut cream if desired or ice cream.

    Low Fat Chili

    Chili at this time of year always tastes good. It’s especially good on cold days during the fall and winter months. I usually like it with crackers and cheese, but this time I decided to have a vegetable salad with it. It’s one of the easiest recipes to make that doesn’t take long to make and it can last up to a week if you live alone.

    Mixing with celery and onions, stir fry in olive oil until sautéed. I like to add low-sodium canned beans, chili powder and lean ground beef, plus I add one can of tomatoes and two jars of Presco Spaghetti sauce that gives it that tender, sweet taste. It’s easy to prepare for the rest of the week just heating it in the microwave.

    A bowl of chili is good with anything like a sandwich, salad, or cheese and crackers. It tastes good on a cold day helping you get warmed up. Depending on the ingredients you use it’s lower in fat and calories. You may want to use ground turkey or ground chicken instead of ground beef to your chili or you can make it without the meat altogether depending on how you like your chili.

    Adding kidney beans to chili gives you that extra fiber you need in your diet every day because it helps with digestion. Also adding some vegetables with canned or fresh tomatoes and spaghetti sauce gives you added vitamins to your daily diet too. Also, making your favorite recipes can be healthy using healthy ingredients.

    Ingredients

    1 medium yellow onion, chopped and sliced into small pieces

    1 ½ cup of celery chopped and diced into small pieces

    3 tablespoons of olive oil

    1 teaspoon chili powder

    2 cans of 14.25 ounces of canned low sodium kidney beans

    2 jars of 1 lb 8 oz of spaghetti sauce

    1 pound of lean ground beef

    Instructions

    Add 3 tablespoons of olive oil over heat and add celery and onions stir until sautéed. Add kidney beans, canned tomatoes, chili powder, and continue to stir. Finally, add ground beef and stir and cook until the meat is brown, then add spaghetti sauce and cook for approximately 40 minutes.

    Sugar Free Lemonade

    There are many different ways to make your favorite summer drink without adding lots of sugar to it. Lemonade can be made with real lemons and a zero-calorie sweetener to it like “Truvia” that has no calories or you can use another sweetener either way. Lemonade goes back when I was a kid. I remember how my mother used to use a citrus squeezer, the kind that was used during the 1800s to early 1900s. She would use five lemons, sugar and water, then she would add ice cubes and water. When she served it, it had that sweet, refreshing taste to it. I still miss how she made it, but things have changed.

    Today, since I have type 2 diabetes, I use the artificial kind of sweetener to sweeten my lemonade. Of course, I use real lemons to give it that real taste. Adding real lemons to your lemonade not only tastes better, but it’s better for you. Lemons not only have lots of vitamin C but they cleanse your liver from toxins that we ingest inside our bodies. On the other hand, the dried powered kind of lemonade you buy in a grocery store has artificial ingredients with lots of additives in them which is unhealthy for you.

    Lemon Squeezer, Lemon Juice, Citrus

    Making real lemonade is more time consuming because you have to squeeze the lemons to make the juice, but it’s worth it to your children and yourself. Also, lemons are more expensive than just buying the frozen or dry kind. Also, it doesn’t have to be made from white sugar, but you can make it from different kinds of sweeteners like Splenda or Truvia. Lemonade has been around for many years and it will continue to be around for centuries to come, so why not enjoy it during the summer months when you can.

    Ingredients

    6 medium fresh lemons, sliced in half
    1 cup of Truvia
    7 cups of water

    Instructions

    Slice lemons in half and squeeze with a citrus juicer, then add Truvia and water. Keep refrigerated until it’s cooled, then serve. Serves 7 people.

    One of my favorite drinks during the summer months, especially when it’s hot, is limeade or lemonade. Making it with the sweetener, Truvia, tastes better than I thought it would. Also, making limeade with real limes gives you that extra vitamin C with antioxidants plus the water we need every day. Most people buy the dry artificial lemonade that has a lot of additives with artificial flavors in them that can be harmful to your health, as well as your children’s health..

    Making real limeade with real limes is better for you and your children. It tastes better than the artificial kind plus it gives you that refreshing taste as well. I especially enjoy drinking limeade after taking an hour walk because it refreshes my thirst. When I was a kid, my mother used to make lemonade with fresh lemons with lots of sugar added to it to give it that sweet taste.

    Today, we don’t want to spend the time and money on limes or lemons instead, we would rather buy the dry artificial kind of stuff that doesn’t have nutritional value and has additives to it because lemons or limes are more expensive and it takes more of our time to make lemonade or limeade.

    In my opinion, I would rather spend more money on real limes or lemons for health reasons. Also, lemons and limes have a lot of vitamin C that helps to protect against colds and the flu. It helps keep you hydrated and refreshed too. Making an investment in our health and our children’s health as well, will help fight against diseases as we get older, so taking the time to make real limeade is worth the time and money.

    Ingredients

    6 limes cut in half
    1 cup Truvia
    6 cups of water

    Instructions Cuisinart CCJ-500 Pulp Control Citrus Juicer, Brushed Stainless

    Cut limes in half and grind them in a “citrus juicer” until juice is out. Add 1 cup of Truvia and 6 cups of water. Shake well until the Truvia dissolves, then chill until the limeade gets cold then serve. Makes up to 6 glasses.

    happyBeing born and raised in Minnesota, I have always loved food, especially the wrong kind of food. Now, since I have diabetes, I still love junk food; however, I have had to learn to how to take a recipe and alter it or change it into low fat recipes. Over time, I have learned to be creative with my recipes so I can eat and not feel guilty. When baking deserts, I have learned to exclude “processed sugar” and “processed white flour” and substituted it for “gluten-free flours” and “natural sweeteners” instead.

    For example, when baking cookies, I have used natural sweeteners and gluten-free flour and, to my surprise, the cookies taste the same as the regular ones that other people bake, but without all the fat and sugar. Other than that, I enjoy creating recipes too! I like to crochet, cook, bake, embroider pillowcases and go for walks. With my cooking and baking skills, I have learned to blog and share with others some of my recipe ideas so they’ll learn to cook healthy meals for themselves and their families as well.

    We all love our sweets and fattening foods, but we have to learn how to make them without all the fat and sugar to create healthier lifestyles for ourselves and our families, as well.
